Imagine tossing your favourite vegetables, a source of quality protein, and some healthy fats into one pot, letting it simmer to perfection, and having a delicious and nutritious meal with minimal cleanup. 

To get you started, here are 5 of our favourite Paleo one-pot recipes: 

1. Lemon Herb Chicken and Veggie Bake

Toss chicken pieces (thighs or breasts), broccoli florets, chopped carrots, bell peppers, and red onion with olive oil, lemon juice, dried herbs (like rosemary and thyme), salt, and pepper.

Spread in a large baking dish and bake at 400°F (200°C) for 30-40 minutes, or until chicken is cooked through and vegetables are tender. 

2. Spicy Ground Beef and Sweet Potato Skillet

Brown ground beef in a large skillet. Drain any excess fat.

Add diced sweet potatoes, chopped onion, diced tomatoes (canned or fresh), chilli powder, cumin, garlic powder, and a pinch of cayenne pepper (optional).

Stir well, cover, and simmer for 20-25 minutes, or until sweet potatoes are tender.

Garnish with fresh coriander. 

3. Coconut Curry Shrimp with Cauliflower Rice

In a large pot, sauté diced onion and garlic in coconut oil until fragrant.

Add shrimp, chopped bell peppers, broccoli florets, and cauliflower rice.

Pour in full-fat coconut milk and red curry paste (ensure it’s Paleo-friendly).

Simmer until shrimp is pink and cooked through and vegetables are tender-crisp. 

4. Garlic Rosemary Pork Tenderloin with Roasted Root Vegetables

Cut pork tenderloin into medallions.

Toss with chopped carrots, parsnips, and sweet potatoes, olive oil, minced garlic, fresh rosemary, salt, and pepper in a large roasting pan.

Roast at 425°F (220°C) for 20-25 minutes, or until pork is cooked through and vegetables are tender and slightly caramelised. 

5. Mediterranean Fish with Cherry Tomatoes and Olives

Place fish fillets (cod, salmon, or white fish) in a large oven-safe skillet.

Surround with cherry tomatoes, kalamata olives, sliced red onion, and a drizzle of olive oil. Sprinkle with dried oregano, salt, and pepper.

Bake at 375°F (190°C) for 15-20 minutes, or until fish is cooked through and flakes easily with a fork.
